RECIPE OF THE WEEK: FISH CURRY WITH COCONUT

Welcome to the first Recipe of The Week where I'll share a few more details about one of the dishes you'll find in the Cooking Guide each week.

This weeks dish is a South Indian inspired Fish Curry that's packed full of citrus and coconut flavors. I've cooked this dish with many types of fish and it's safe to say it works best with meaty fish - Cod or Tilapia works great but I personally prefer cooking it with Sea Bass.

 

Here are a few important tips:

  • Marinade the fish for at least 4 hrs
  • Make sure you use a thick coconut milk - avoid light options
  • When baking the fish, make sure you remove the foil for the last 10 mins 
  • Don't be afraid - pour all of the sauce over the fish before serving
