Ground Beef or Lamb KEBABS
Unbelievably easy, authentic kebabs – meat seriously dressed to impress!

THINGS YOU NEED:

2 lbs ground beef or lamb
1 medium onion
2 teaspoons salt
2 tablespoons chopped fresh garlic
2 tablespoons chopped fresh ginger
¼ teaspoon baking soda (bicarbonate of soda)
bbq sticks
 

FROM THE SPICE BOX:

1 ½ tablespoons ground cumin & coriander
1 teaspoon garam masala
½ teaspoon chili powder*
 
*Note: if you prefer a hotter spice level 
increase the amount of chili powder by ¼ teaspoon increments to suit your taste. Be cautious!

ESSENTIAL PREPARATION:

  • If using wooden bbq sticks I recommend soaking them in water for about 30 minutes
  • Peel and chop the garlic as finely as possible
  • Peel and chop the ginger as finely as possible
  • Peel and grate/shred the onion
  • Thoroughly mix all of the ingredients together in a bowl using your hands
  • Cover the bowl and let it marinate in the fridge overnight, or for at least 8 hours
  • When you are ready to cook, use your hands to shape the mix into 8 equal size balls
  • Pierce through the center of each ball with the bbq stick and then shape the meat along the stick to form the kebab which should be approximately 1 inch diameter and most of the length of the bbq stick
  • Get grilling
  • Suggested serving accompaniments include Raita and / or Red Chutney and salad
